I’ve never been a huge red meat eater so I was super excited to find healthy vegetarian alternatives to meat in beans. Black beans are great for those looking to bump up fibre, improve bone strength and lower cholesterol.
What I love most about black beans is that they are versatile and extremely affordable. For example you can add black beans to rice, soups, salads and you can even make dips. Talk about bang for your buck. I also have some green beans coming up in the garden but I’ll save that for another post.
It does take some time getting used to the concept of beans as meat but once you get the flavor right I promise you won’t miss those traditional burgers for much longer. I have all of my family hooked on these burgers and they are some crazy picky eaters.
2 Cups of black beans If you use dry beans be sure to soak them for a few hours ahead of time
1/2 Red Pepper
1 Cup of Seasoned Breadcrumbs
Seasonings: Onion powder, garlic powder, salt, pepper, all purpose seasoning
Rinse beans and cover in a pot with water
Boil beans until soft
Drain in a strainer
Saute onion and pepper in a frying pan
Add beans, onion and pepper into a blender or food immersion mixer
Scrape into a container or large bowl
Add breadcrumbs and seasonings to taste
Scoop and roll into burger pattie
Pan fry on medium heat
Prep Time: 10 minutes
Total Cook Time 30 minutes
Bermuda Homemade Onion Rings
When life gives you onions make onion rings. Okay, this one was probably not the healthiest side but it was very tasty and you can bake onion rings instead of deep frying.
1 Bermuda Onion
1/2 Cup Seasoned Bread Crumbs
1 Cup of flour
Salt, Pepper, Other seasonings of choice
Cut the onion width ways or in horizontal slices
Put the flour, seasonings and bread crumbs in a bag
Dip the onion rings in egg and in the mixture. Repeat the process
Bake or pan fry in healthy oil of choice.
