I have never been a fan of cold salads. Nope, not for me. So I was surprised the first time I tried this salad from Costco and I loved it. Immediately I wanted to learn to make it myself so I started searching recipes and eventually added my own flare. It also taste great with Watermelon and feta cheese for those non vegans.

Funny enough, I do not like cooking in the Summertime so if any recipe helps me save time from standing over a hot stove sign me up. I will definitely bringing this dish to my family BBQ and couples night for my friends to try.


1 Cucumber

1 Tomato

2 Cups Quinoa

1 Cup Italian Dressing

1/4 cup Lemon Juice

Fresh Parsley

Seasonings: Black Pepper, Italian Seasonings, Garlic Powder, Onion Powder


Boil water add the quinoa for 15 minutes. Strain any access water

Let the quinoa cool

Chop up the cucumber, tomato and parsley

Once the quinoa has cooled mix the ingredients in a container

Stir in seasonings

Place in refrigerator for 2 hours to cool

Eat with other cold salads or as a side to meat of choice
